A bone is composed of a matrix that includes collagen, protein and mineral deposits, including calcium phosphate, and provides gelatin to foods. Bone marrow, a form of spongy tissue within some bones, contributes proteins, fat and cholesterol. However, laboratory analysis has indicated that, broths made only from bones provide little nutritional value and much of protein in the bone does not dissolve.
Bone marrow is safe to eat, assuming that meat from which it's derived is cooked to the appropriate internal temperature. However, consumers have to be caution when it comes to bone marrow from the spine of cows due to mad cow disease. But leg bones and oxtail of these animals are considered to be safe.
Despite a lack of research, bone recently has been promoted as a form of treatment for conditions such as autism and schizophrenia. There also has been an interest in consuming bone broth due to the popularity of the Paleo diet. However, research on contaminants in both broth is needed.
